Bill’s culinary adventure started at a young age, helping his mother and grandmother with family dinners. After graduating from the Culinary Institute of America, he spent three years working around New York and his hometown of Westwood, New Jersey, before connecting with Marriott Hotels, which brought him up and down the East Coast and to the Caribbean. In 2012, Bill landed at The Carolina Inn as the executive sous chef, where he spent more than four years before leaving to start a joint venture with Chef James Clark. Postal Fish Company is a farm and ocean-to-table restaurant in the heart of Pittsboro, focusing on underutilized fish from the Carolinas.
